WinUAE is the most developed Amiga emulator, and it has a built in recording feature.

I had the same problems doing high-quality recordings. Finally I managed to get an old Panasonic DVD-recorder (DMR-E53). Its recording function is fucked up, but its great to get a stable signal from the old ladys rgb-out. I connect the amiga via RGB-scart-cable and pass the signal through the dvd-recorder. The signal is recorded via Y/C using a avid-mojo-box and avid-mediacomposer. Should work with consumer-tv-capture-cards too.

The problem with winuae is that emulator is not the true machine :D some effects demos/intros look weird etc
